KETO CHOCOLATE CHIP BROWNIE TOWER – Low Carb, Gluten Free, Sugar Free

Why don’t you take your brownie to the next level? This pretty Keto Chocolate Brownie Tower consists of chocolate chip brownie, stevia sweetened whipped cream and thin crispy chocolate plates.

I created this recipe three months ago in March and I’m somehow releasing it now in June 😅

It may get a bit messy when you stick a fork in it, especially when the chocolate plates are just out of the fridge and still hard. Therefore, I suggest that you bring your assembled chocolate brownie tower to room temperature before serving, which makes your brownie nice and soft, too 🙂

I actually tried this with almond butter brownie as well as peanut butter brownie, but I’ve come back to this chocolate brownie, which definitely tastes better with whipped cream and chocolate plates.

I make my own chocolate chips (no recipe because I always improvise), but you can use Lily’s Chocolate Chips. Because I live in Japan, it’s not that easy to get Lily’s chocolate…

Ingredients

Brownie

  • 1 oz (28 g) Unsweetened Baking Chocolate, Chopped
  • 1/4 cup (60 cc) Heavy Cream
  • 1/4 cup (25 g) Almond Flour (I always measure by weight)
  • 1 tbsp Unsweetened Cocoa Powder
  • 1 tsp Stevia Powder
  • A Pinch of Sea Salt
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 3 tbsp (1 oz / 28 g) Sugar Free Chocolate Chips

Chocolate Plate

  • 0.5 oz (14 g) Coconut Oil
  • 1.5 oz (42 g) Unsweetened Baking Chocolate, Chopped
  • 1/2 tsp Liquid Stevia
  • 1 tsp Vanilla Extract

Whipped Cream

  • 3/4 cup (180 cc) Heavy Cream
  • 2 tsp Stevia Powder
  • 1 tsp Vanilla Extract
  • 1/8 tsp Xanthan Gum (Optional) (To stabilise)

To Dust

  • 1/2 tsp Unsweetened Cocoa Powder

Instructions

Brownie (Watch the video in the post)

  1. Preheat the oven to 180 C / 350 F. Line a loaf pan (8 x 4 inch / 20 x 10 cm) with parchment paper.
  2. Heat the heavy cream in a saucepan over low heat. Bring to a simmer and turn off the heat. Add the unsweetened chocolate. Stir until melted and smooth.

  3. In a mixing bowl, add the almond flour, cocoa powder, stevia powder and salt. Whisk well. Add the chocolate mixture and mix well. Add the egg and vanilla extract and mix well. Then, add the chocolate chips and stir lightly.

  4. Pour the batter into the prepared loaf pan and level out.
  5. Bake for about 10 minutes.
  6. Remove from the oven and let cool completely.
  7. Cut in half lengthwise and crosswise.

Chocolate Plate

  1. Cut parchment paper into a rectangle bigger than a 10 inch / 25 cm square. Fold parchment paper into half, then to the size of the bottom of the loaf pan on both sides of the centre line.

  2. Melt the coconut oil in a saucepan over low heat. Turn off the heat when half melted. Add the unsweetened chocolate. Leave a couple minutes and then stir until melted. Add the liquid stevia and vanilla, and mix.

  3. Pour the chocolate mixture within the folded lines of the parchment paper. Level out.

  4. Refrigerate for about 15 minutes, or until set.
  5. Remove from the fridge. Cut into 8 rectangles by cutting the whole piece into half along the centre line and then each half into half lengthwise and crosswise.

  6. Keep them in the fridge until assembly.

Whipped Cream

  1. In a large mixing bowl, beat the heavy cream, stevia and vanilla until stiff peaks form.
  2. Place into a large piping bag.

Assembly

  1. Pipe the whipped cream on each brownie piece. Then, place each chocolate plate over the cream. Repeat with the rest of the whipped cream and chocolate.

  2. Dust with the cocoa powder.

Recipe Notes

Bring to room temperature before serving.
