LOW CARB HOMEMADE “DORITOS” – Keto Friendly, Gluten Free

I’ve been wanting to make Keto Friendly “Dorito” Chips by tweaking my Protein Chips recipe. I finally did it 😁 (although it was more than one month ago…)

Even though I tweaked my recipe, I ended up trying several times just to come up with this simple recipe… Yes, the same thing happened when developing Cinnamon Protein Chips…, which made me a bit sick then. Hahaha… Developing new recipes are sometimes not easy as you think even when tweaking the existing recipes!

I love these Keto Friendly Homemade “Dorito” Protein Chips. When I start to eat, I cannot stop… The flavour is kind of strong in my opinion, which makes me want to eat more. The flavour may be too strong for some people, so I suggest that you adjust the quantity of the seasoning when sprinkling after 3-minute baking if you don’t like it strong.

Ingredients

  • 0.75 oz (21 g) Avocado Oil (Can sub melted butter, room temp)
  • 3 tbsp Water
  • 0.7 oz (20 g) Whey Protein Isolate (About 4 tbsp)
  • 0.88 oz (25 g) Finely Grated Parmesan (Powdery) (About 1/4 cup)
  • 1 oz (28 g) Grated Red Cheddar
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Sea Salt

Instructions

  1. Preheat the oven to 160 C / 320 F. Line a baking sheet with parchment paper.
  2. In a bowl, combine together the avocado oil, water and whey protein isolate.

  3. While letting the whey isolate mixture sit for a couple minutes, in another bowl, mix well the garlic powder, chili powder, onion powder, cumin, smoked paprika, and sea salt. Divide into two equal portions (two teaspoons each). Reserve one portion.

  4. Add the other portion of the seasoning mixture and finely grated parmesan to the whey isolate mixture. Stir until well combined.
  5. Place the mixture on the parchment paper and spread it as thin as possible.

  6. Sprinkle the red cheddar cheese.

  7. Bake for 3 minutes.
  8. Remove from the oven. Sprinkle the reserved seasoning. (Adjust if you don’t like the flavour to be strong.)

  9. Bake for another 15 minutes, or until crispy.
  10. Let cool for 10 minutes, then break it into pieces.
