KETO TIRAMISU POPSICLES – Low Carb, Gluten Free, Sugar Free

I felt like making easy Tiramisu Flavoured Ice Popsicles, and I thought that an Instant Pot Egg Bites Mold would be perfect for homemade popsicles. Silicone allows for easy popsicle removal, and I thought that the size of each hole of this egg bites mold was great for portion control.

As I said, these tiramisu popsicles are easy to make because no custard is involved, same as my popular Keto Tiramisu. (So, should I just call them Keto Coffee Flavoured Cookies and Cream Popsicles…?) Yes, cookie baking is required, but other than that, it’s just mixing and freezing.

Ingredients

Cookie

  • 1.76 oz (50 g) Almond Flour (About 1/2 cup)
  • 1 tsp Coconut Flour
  • 1/2 tsp Stevia Powder
  • A Pinch Salt
  • 1 oz (28 g) Unsalted Butter
  • 1 tsp Instant Coffee Granules
  • 1/2 tsp Vanilla Extract

Popsicle Mixture

  • 1/2 cup (120 cc) Heavy Cream
  • 6.5 oz (185 g) Mascarpone Cheese, Room Temp
  • 2 tsp Liquid Stevia (Adjust to your liking)
  • 1 tsp Vanilla Extract
  • 1.5 tsp Instant Coffee Granules

To Dust

  • 1 tsp Unsweetened Cocoa Powder

Instructions

Cookie

  1. Preheat the oven to 180 C / 350 F.
  2. Melt the butter, then add the instant coffee and mix well. (It’s okay even if the granules won’t dissolve fully.)

  3. In a mixing bowl, whisk the almond flour, coconut flour, stevia powder and salt. Add the butter mixture and vanilla. Stir until a soft dough forms.

  4. Spread the dough into a 5 inch (12.5 cm) square on a baking sheet lined with parchment paper.

  5. Bake for 20 minutes.

  6. Let cool completely on a wire rack.
  7. When cooled, place in a reusable plastic bag and seal. Crush with a rolling pin. (The cookie is probably brittle, so if you want chunks in your popsicles, don’t crush vigorously!)

  8. Set aside.

Popsicle Mixture

  1. In a large bowl, beat the heavy cream until stiff peaks form. Set aside.
  2. In another large bowl, beat the mascarpone until creamy. Beat in the liquid stevia, vanilla and instant coffee. Fold in the whipped cream. Then add the crushed cookies in 2 parts, mixing after each.

  3. Spoon the mixture into an Egg Bites mold which should have 7 holes (or into any other silicone mold), then tap the mold onto the counter top to even out. Insert popsicle sticks.

  4. Freeze for at least 3 hours.

  5. Remove the popsicles from the mold.

  6. Dust with the cocoa powder RIGHT BEFORE serving. Enjoy!

Recipe Notes

If your popsicles get rock hard in the freezer after longer periods , let sit out at room temp for a couple minutes.

You can use any silicone molds. I'm not sure how easy it is to remove these popsicles from non silicone molds.
