CHICKEN OKRA TOMATO SOUP (Instant Pot or Stove Top) – Low Carb, Keto Friendly

Fresh okra season is almost over here in Japan. I like okra so much, so I eat them almost every day in summer. When I was a vegan for nine years, I used to make this tomato soup with tofu (instead of chicken) and vegetable broth (instead of chicken broth). So, I’ve made this soup many times before, BUT after making this recipe video I found out that there is a stew called ‘Gumbo’ that is popular in the state of Louisiana! It seems that gumbo is similar to this recipe…? I had no idea! Still, I don’t know the exact details about the traditional gumbo recipe, so I just won’t call this recipe of mine gumbo…

Although I live in Japan, I had to buy an Instant Pot on Amazon.com! I couldn’t resist! Mine is Duo Plus 6Qt, which usually costs $129.95, but I bought it on sale at $89.95. It was a very good purchase! The voltage difference was my main concern, but I’ve used 10+ times already and it’s been working pretty well! I love my Instant Pot ❤

You can of course make this soup on the stove, but using an Instant Pot saves labour and makes the chicken really tender, I think. The Instant Pot has made cooking so easy because I don’t have to check a pot on the stove constantly.

My meal recipes are unbelievably unpopular (lol), compared to the dessert recipes. (I’m not familiar with popular main dishes in the US. Japanese main dishes are mostly seasoned with soy sauce, mirin, sake and sugar, which I’ve never really liked… Why do the meals have to be sweet?) However, all of my recipes and videos are not only for those who are looking for low carb recipes but also for myself for future reference, so no matter how unpopular they are (lol again), I will publish them anyway 🙂

By the way, I’ve finally changed the blog design and made a logo… I’ve been blogging for almost one year and a half and was too lazy to do so. I’m happy with both of the design and the cute avocado logo 🙂

Also, because I started this whole thing on YouTube, the blog is named Keto Diet “Channel”. However, my first YouTube account got somehow suspended soon after and I had to focus more on the blog, so I wasn’t really happy with the name after that… I just wanted a fancier name, but it’s kind of hard for me (a non-native English speaker) to name anything in English. Anyway, now with the cute avocado logo I’m somehow happy with the name too 🙂

Ingredients

  • 1.3 lbs Chicken Thigh with Skin, Chopped (600 g)
  • 1 tbsp Butter
  • 2 Tomatoes, Diced (11 oz/300 g)
  • 1 cup Chicken Broth (240 cc)
  • 1 tbsp Grated Ginger
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 2 tbsp Worcestershire Sauce
  • 7 oz Okra (200 g)
  • 4 tbsp Grated Parmesan Cheese (Omit for Paleo)

Instructions

To Cook in the Instant Pot

  1. Press the ‘Sauté button on your Instant Pot to preheat. When hot, add the butter. Then add the chicken pieces and cook until brown.

  2. Add the tomatoes and stir.
  3. Add the chicken broth, ginger, salt, black pepper, thyme, basil, oregano, Worcestershire sauce and mix.

  4. Close and lock the lid of the Instant Pot. Turn the pressure valve to 'SEAL'. Press the ‘Pressure Cook’ or 'Manual' button and adjust the timer to 8 minutes.

  5. <While pressure cooking> Rinse the okra. Remove skin around top with calyx. Trim off the tip of the stem. Cut into 1 inch slices.

  6. When the pressure cooking is done, release the pressure by using ‘Quick Release’ (= moving the pressure valve to venting position). Remove your Instant Pot lid.

  7. Press the ‘Sauté’ button. Add the okra and simmer for 3 - 10 minutes, depending on how tender you want your okra to be.

  8. Divide the soup among serving bowls. Sprinkle with the parmesan cheese.

To Cook on the Stove

  1. In a pot over medium heat, add the butter. Then add the chicken and cook until brown.

  2. Add the tomatoes and stir.

  3. Add the chicken broth, ginger, salt, black pepper, thyme, basil, oregano, Worcestershire sauce and mix.

  4. Simmer with the lid on over low heat for about 20 minutes.

  5. <While simmering> Rinse the okra. Remove skin around top with calyx. Trim off the tip of the stem. Cut into 1 inch slices.

  6. Open the lid and add the okra.

  7. Simmer without the lid for 3 - 10 minutes over medium heat, depending on how tender you want your okra to be.

  8. Divide the soup among serving bowls. Sprinkle with the parmesan cheese.

Recipe Notes

If you want your okra to be really tender and soup to be thick, you can pressure cook (Instant Pot) or simmer with the lid on (Stove) at the same time as the chicken pieces.

Personally, I think this kind of soup always tastes better the next day.
