BACON WRAPPED BROCCOLI STUFFED PORK CHOPS – Keto, Low Carb
The video for this recipe was probably the first video that I uploaded on YouTube if I remember correctly. I started as a YouTube vlogger, but after uploading four or five recipe videos, my YouTube account somehow got suspended and all the uploaded videos were gone from the Internet. So I quickly made this blog and started uploading my videos on Facebook. Also, I created a new YouTube account. However, I didn’t upload that video again on YouTube or Facebook, so I just decided to update the video as well as the recipe!
In the previous recipe, I didn’t use cream cheese or wrap the rolled pork chops with bacon. Bacon is not really in the Japanese food culture and good ones are hard to find (thinly sliced pork belly is widely available instead), but now I’m completely influenced by the American culture 🙂
I don’t really need any sauce for this dish because the cream cheese and wrapped bacon are tasty enough for me. But if you want, I think Tahini (sesame paste)-based or peanut butter-based sauce goes well.
Bacon Wrapped Broccoli Stuffed Pork Chops / Keto / Low Carb
- 2 slices Thin Cut Pork Chops (About 9 oz / 250 g)
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 6 slices Bacon
- 2 oz Fresh Broccoli, Chopped (56 g)
- 2 oz Cream Cheese, Softened (56 g)
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Seasoning
- 1.5 oz Shredded Mozzarella Cheese (42 g)
Preheat the oven to 200 C / 400 F.
Place the broccoli in a food processor and process.
Add the cream cheese, salt, black pepper, garlic powder and seasoning in the food processor and blend well.
Flatten the pork chops with a mallet.
Sprinkle both sides of each pork chop with the salt and black pepper.
Spread the broccoli mixture over each pork chop. Sprinkle the mozzarella over the broccoli mixture.
Roll up the pork chops.
Lay 3 slices of bacon vertically, overlapping each slice a little bit. Place one of the rolled pork chops at one end of the bacon and roll up. Repeat with the other pork chop.
Place on a baking sheet with the seam side down.
Bake for about 40 minutes.
Serve as is or with your favourite sauce.
