PEANUT BUTTER ICE CREAM – Low Carb, Keto Friendly, Sugar Free

I know that there are tons of peanut butter ice cream recipes out there, so this recipe is just for me for later use!

It’s been ridiculously hot here in Osaka, Japan (like 100 degrees F almost every day), so I’ve been eating a lot of this peanut butter ice cream lately… I should go easy on peanut butter because it makes me gain weight…, but I can’t! Because it’s too tasty!

Ingredients

Ice Cream

  • 6 oz Cream Cheese (Room Temp) (170 g)
  • 5 tbsp Unsweetened Peanut Butter
  • 1 tbsp Stevia Powder (or 1/2 cup Powdered Sweetener of Choice)
  • 1.5 tsp Vanilla Extract
  • 3/4 cup Heavy Cream (180 cc)

Chocolate Hot Fudge Sauce

  • 1/4 cup Heavy Cream (60 cc)
  • 1 oz Unsweetened Chocolate (28 g)
  • 1 tsp Liquid Stevia
  • 1 tsp Vanilla Extract

Instructions

Ice Cream

  1. In a large bowl, mix together the cream cheese, peanut butter, stevia and vanilla extract.

  2. In another bowl, beat the heavy cream to stiff peaks.
  3. Fold in the whipped cream to the cream cheese mixture.
  4. Transfer the mixture to a freezer safe container, cover it, and freeze for 4 - 5 hours.

  5. Pour the chocolate hot fudge sauce over the ice cream before serving.

Chocolate Hot Fudge Sauce

  1. Heat the heavy cream in a saucepan over low heat. Bring to a simmer and remove from the heat.
  2. Add the unsweetened chocolate and stevia. Stir until melted and smooth.

  3. Add the vanilla and mix well.

Ice cream will get hard in the freezer after longer periods, but not rock hard. Let it sit out at room temp for a few minutes.

    Do you think this ice cream recipe would be doable in a countertop ice cream maker? That would churn it for about 25 minutes?

      I’m sorry that I have to say I honestly don’t know. I don’t own an ice cream maker and have never used in my whole life! Wish I had an answer.
