Pan-Fried Bacon Wrapped Zucchini Skewers - Keto, Low Carb

Keto Pan-Fried Bacon Wrapped Zucchini Skewers / Low Carb

Published on Jun 12, 2017

Who doesn’t love bacon? Nobody!

The contrast of the crispy bacon and soft zucchini, with juicy cherry tomatoes, is just amazing. If you don’t like the taste of cooked avocado, please just skip it 🙂

To wrap each zucchini piece, a half-length bacon slice is enough, so this recipe yields 12 skewers. I’m sure two rounds of cooking in a frying pan will be needed, so please don’t use up the sauce in the first round.

I love the Simply Organic brand, so I used their ginger and paprika.

  • 12 slices Bacon
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 Zucchini (8 inch / 20 cm long)
  • 12 Cherry Tomatoes
  • 1/2 Avocado
  • 1 tsp Lard (or Other Oil of Choice)

  • 3 tbsp Soy Sauce (or Coconut Aminos)
  • 1 tsp Ground Ginger
  • 1 tsp Paprika
  • 3 - 4 drops Stevia Liquid (or Other Sweetener of Choice)

  1. Mix together the sauce ingredients. Set aside.
  2. Cut the bacon slices in half. Sprinkle both sides with the salt and black pepper

  3. Cut off each end of the zucchini and cut in thirds. Then cut each third lengthwise into half and then cut each half in half again, ending up with 24 pieces.
  4. Cut the avocado into 12 cubes.
  5. Wrap each zucchini piece with a bacon strip.
  6. Thread a bacon wrapped zucchini onto a skewer. Add a cherry tomato, another bacon wrapped zucchini and then an avocado cube. Repeat with the remaining zucchini pieces, tomatoes and avocado cubes.

  7. Heat the lard in a frying pan over medium heat and add the skewers.
  8. Pan fry with a lid on until the bacon has turned brown and crisp, about 10 minutes.
  9. Turn to low heat. Pour the sauce into the pan and turn the skewers to coat.
