PANNA COTTA WITH BERRY JELLY – Keto, Low Carb, Sugar Free

Ingredients

Panna Cotta

  • 3/4 cup Whipping Cream (180 cc)
  • 2 tsp Stevia Powder (or 2 tbsp Other Powdered Sweetener of Choice) (Adjust)
  • 1 tsp Gelatin (3 g)
  • 1 tbsp Water
  • 1/4 cup Heavy Cream (60 cc)

Berry Jelly

  • 1 tsp Gelatin (3 g)
  • 2 tbsp Water
  • 2 tbsp Boiling Water
  • 4 oz Frozen Berries, Defrosted (112 g)
  • 1 tbsp Lemon Juice
  • 2 tsp Liquid Stevia (or 2 - 3 tbsp Other Powdered Sweetener of Choice)

Instructions

Panna Cotta

  1. In a small bowl, soften the gelatin by soaking in the water.
  2. Place the whipping cream and stevia into a saucepan over low heat until the sweetener dissolves.

  3. Add the gelatin mix to the saucepan and simmer until the gelatin has dissolved. Remove from the heat.

  4. Rest a sieve over the top of a bowl and pour the cream mixture into a sieve, then chill the bowl in an ice bath (ice cubes + water).
  5. While chilling the cream mixture, beat the heavy cream until soft peaks form.
  6. Add the whipped heavy cream to the cream mixture and stir well.
  7. Pour into glasses and chill for 2 - 3 hours until set.

Berry Jelly

  1. In a small bowl, soften the gelatin by soaking in the water for a couple of minutes.
  2. Add the boiling water to the gelatin mix and stir well to dissolve the gelatin.
  3. Crush the berries in a medium bowl. Add the gelatin mix, lemon juice and stevia and mix well.

  4. Make sure the panna cotta has set and pour the jelly over the panna cotta.
  5. Chill for 2 - 3 hours or until the jelly has set.
