FAT HEAD CHEESY WEAVE – Keto, Low Carb, Gluten Free

When is your next get together? I think this recipe is perfect for that 🙂

I love Fat Head Dough, so I just want to try different recipes with it. (See my other recipes using Fat Head Dough from HERE.)

When weaving the dough, you may think that it’s not looking good, but that’s okay. Mine looked terrible in the video, too 😛 When baked, it comes out amazing!

Fat Head Cheesy Weave / Keto / Low Carb / Gluten Free

Fat Head Dough

  • 1 1/2 cups Shredded Mozzarella Cheese (160 g)
  • 2 oz Cream Cheese (56 g)
  • 1 Egg
  • 3/4 cup Almond Flour (85 g) (or 3.5 - 4 tbsp (30 g) Coconut Flour)
  • 1/2 tsp Aluminum-Free Baking Powder
  • 1 tsp Xanthan Gum (Optional but helps the texture)


  • 2 oz Sausage (Cooked and Cut into Thin Slices)
  • 1 oz Nuts (Chopped)
  • 1/2 cup Shredded Mozzarella Cheese
  • 2 - 3 tbsp Mayonnaise


  1. In a large saucepan, melt the mozzarella cheese and cream cheese over low heat until it can be stirred together and remove from the heat. (Or microwave 1 - 1.5 minutes.)
  2. Stir until well combined.
  3. Add an egg and stir.
  4. Add the almond flour and baking powder (and xanthan gum) and mix well.

  5. Wet your hand and knead it until uniform. *Reheat the dough if it gets crumbly. Add flour little by little (like 1/2 tsp at a time) if the dough is too sticky.

  6. Preheat the oven to 190 C / 375 F.
  7. Cover the dough with parchment paper and roll it out to a 15 x 12 inch (40 x 30 cm) rectangle.
  8. Cut the dough into half.
  9. Place the sausage, nuts, mozzarella cheese and then mayo on one of the dough. Cover it with the other half of the dough.
  10. Seal the seams.

  11. Cut the dough into 8 pieces and weave them.

  12. Bake for 22 – 25 minutes.

Recipe Notes

Reheat in the oven / toaster oven before serving for fluffy texture.
